If you want to go against these claims and ensure that your champagne is perfectly preserved, particularly for professionals, there is the technology of inerting with a neutral gas: CO2.
By injecting a thin layer of gas into the hermetically sealed bottle, existing bubbles are compressed and a thin layer is deposited on the surface of the wine, protecting it from oxidation.
Champagne protected in this way will keep its bubbles and aromas perfectly for a week, allowing it to be enjoyed by the glass day after day. It’s a system that will pay for itself very quickly for wine professionals, who will be able to offer a wider range of Champagne by the glass!
